Despite the fact they live on an island, the Irish are not particularly famous for their fishing industry. However, like the Scots they do love the salmon caught in the streams and rivers and often smoke it. Although this recipe isn't particularly Irish, it is Irish in tome and tenor and is supremely easy to make so it's great at the last minute. I particularly like it with a pint of Guinness, but a dram of whiskey isn't out of place. Recipe here...
