Anyone who knows me knows how much I love the patty melt. I once described it as the love child of a grilled cheese sandwich and a burger -- how much better can a sandwich get? Yes, it's time consuming when done right, and yes, it's maybe not the healthiest meal in the world. But that's all the more reason to insist that, if you're going to make it, you should make it right.
That means, first off, no thousand island dressing. If you want thousand island, go with a Reuben. And much as I love cheddar cheese, a patty melt cries out for Swiss. Don't skip the onions. Serve it with fries or tots and a crisp, tangy side dish like this cucumber salad, and you'll be happy. Trust me.
