I'll admit it -- I used to be afraid of poaching eggs. The thought of plunging a naked egg into simmering water was my worst culinary nightmare. But I faced my fear and discovered that the right method and a little practice was all it took to turn out beautiful poached eggs every time. Now poached eggs are one of my favorite ingredients. Not only are they delicious for breakfast, but they also enhance this bistro salad or turn a spinach side dish into dinner -- they give you culinary power.
