Ground beef gets a bum rap. If it's not e coli scares in the news, it's pink slime. But ground beef doesn't have to be frightening. If you buy it from a reputable butcher or meat department -- or better yet, grind it yourself -- it's an inexpensive and versatile ingredient. A pound of ground chuck is enough for two meals for the two of us. Sometimes they're quick and easy like sloppy joes or chili dogs; sometimes they're more time consuming like this meatloaf or my one true love, the patty melt. Either way, ground beef is your friend.
