I'm not vegetarian, but occasionally I cook for friends and family members who are, so it's nice to have a few vegetarian dishes in my repertoire. Over the years, I've come across some recipes that can contain meat but are easy to convert to great vegetarian versions. The best candidates for alteration are those recipes where the meat isn't the star of the show -- like stuffed peppers, which can be made with Italian sausage or with vegetables and cheese. More great dishes that can go either way are fried rice and quiche. With or without meat, they're delicious.
