Around here, we follow the price of limes the way some people follow the stock market. We use so much lime juice that any drop in price is reason for rejoicing. Why so much? Part of it is that we like cuisines that call for them -- Southeast Asian and Mexican, for instance -- so we need lime juice for recipes like Mexican shrimp cocktails and Vietnamese chicken salad. Another reason is the prevalence of lime juice in our favorite cocktails, such as daiquiris and margaritas. When limes are especially cheap, we splurge and make this sweetened lime cordial, which is great mixed with club soda and even better in gimlets. If you're a lime fan too, give them a try.
