Easy Potatoes

Potato gratinWhile I'm all for elegant, rich potato dishes (like potatoes Dauphinoise), sometimes I prefer a more simple, rustic dish. That's when I turn to this easy potato gratin, made with lightly smashed red potatoes. No mandoline or serious knife skills necessary -- in fact you can use leftover cooked potatoes, which makes it even faster and easier. Can't beat that!
