Recipe: "Dr. Robert" Champagne Cocktail

The Champagne Cocktail is one of the oldest cocktails on record, and one of the most enduring. In essence, it is sugar, bitters and sparkling wine with a lemon twist. The Dr. Robert simply elaborates on the sweet component by using grenadine in place of sugar and balancing the slightly extra sweetness with the bold use of additional bitters.

Yield: 2 servings



Add the half the grenadine and bitters to each of two chilled champagne flute. Top with the sparkling wine.

* Most commercial brands of grenadine available are not much more than colored sugar syrup. Fortunately, making your own is easy -- and well worth the time. Just mix equal parts (by volume) pomegranate juice and granulated sugar in a jar with a tight fitting lid. Shake until the sugar has dissolved. (It's easier to do if the juice is at room temperature, not chilled.) Keep the grenadine refrigerated.
