After making the syrup the pan goes into the freezer. Depending on how cold your freezer is, how tightly it's packed, and how much granita you're making it can take 2 to 3 hours to develop a rim of ice crystals around the edge. Pull the mixture from the freezer and whisk to mix the ice crystals into the liquid.
