There are loads of recipes for fancy French Toast: stuffed with bananas with caramel on top, drizzled with blueberry compote and whipped cream and spread with Nutella for example. And they're all good, but sometimes simpler is better. In this recipe a selection of spices is mixed into the eggs and then maple syrup goes on top - but not just any maple syrup, get Grade B maple syrup to make this a real treat. (Larger image.) Ingredients:
- 3 Tbsp. unsalted butter
- 4 3/4-inch-thick slices of good French bread
- 4 eggs
- 2 Tbsp. milk
- 1/2 tsp. ground cardamom
- 1/4 tsp. ground ginger
- Pinch of cinnamon
- Pinch of salt
Preparation:
1. Heat oven to 200 degrees.
2. Heat a griddle or frying pan over medium heat.
3. Thoroughly whisk together all ingredients except butter and bread in a pie pan.
4. Melt butter on griddle.
5. Place two slices of bread in the egg mixture and allow them to rest for 1 minute. Turn over and rest 1 minute longer.
6. Fry bread until golden brown on one side (about 2 minutes), turn over and cook other side.
7. Place cooked toast on plate in the warm oven and repeat steps 5 and 6 for remaining two slices.
