It's easy enough to find Creole seasoning in the spice aisle at the supermarket, I counted four different brands the last time I looked. But if you look at the label you'll see the primary ingredient in all of them is salt. The problem with this is that if you want to kick up the spice level in a pot gumbo or jambalaya you automatically kick up the salt level too. Making your own spice mixture is easy enough and you can skip the salt entirely, just adding salt as needed when you're cooking. (This is based on a recipe from the GumboPages.com.)

Ingredients:
- 3 Tbsp. sweet paprika
- 1 Tbsp. onion powder
- 1 Tbsp. garlic powder
- 1 Tbsp. dried oregano leaves
- 1 Tbsp. dried sweet basil
- 1 1/2 tsp. dried thyme leaves
- 1 1/2 tsp. black pepper
- 1 1/2 tsp. white pepper
- 1 1/2 tsp. cayenne pepper
- 1 1/2 tsp. celery seed
Preparation:
Thoroughly combine all ingredients in a small bowl. Store in a glass jar in a cabinet. Will keep for one year before the flavors begin to weaken.
