Steak seasoning is a great way to boost the flavor of an inexpensive steak. And by "inexpensive" I mean the average grocery store steak at $7 to $9 a pound and choice grade at best. You can buy mixtures at the store, but making your own enables you to customize it. I make up a spice jar full at a time and then it's handy when I need it. I found the original recipe on the Web and then modified it to suit my flavor preferences and you should feel free to do the same. (Larger image.) Makes about 1/3 cup.

Ingredients:
- 1 Tbsp. paprika
- 1 Tbsp. kosher salt
- 1 Tbsp. cracked black pepper
- 1 1/2 tsp. granulated garlic
- 1 1/2 tsp. granulated onion
- 1 1/2 tsp. ground coriander
- 1 1/2 tsp. dried lemon peel
- 1 tsp. ground red pepper (I prefer ground chipotle)
- 1 tsp. dried thyme
Preparation:
1. Combine all ingredients and mix thoroughly.
2. Store in a jar, preferably a spice jar with an internal lid with holes for shaking. Spice will keep in a cabinet for one year before the flavor begins to degrade.
