How do you make garlic bread with loads of garlic flavor but without the harshness of raw garlic? You roast the garlic first and use lots of it. The result is packed with garlic flavor but still mellow and the parmesan cheese I add helps produce a delicately crisp crust. I've had people choose a second helping of garlic bread over a second helping of my lasagna - I didn't know whether to be hurt or flattered. (Larger image.)

Cook Time: 15 minutes

Ingredients:

  • 1 stick (1/4 lb.) salted butter - at room temperature
  • 13 cloves garlic
  • 1/4 cup shredded Parmesano Reggiano*
  • 1/2 loaf Italian bread**

Preparation:

1. Heat oven to 375F.

2. Cook 12 garlic cloves in a small skillet over medium heat, checking for browning and turning as needed, until lightly browned on all sides. This will take about 15 minutes and does require attention -- but not too much attention.

3. Cool garlic, peel, and finely chop.

4. Finely chop remaining raw garlic clove. (This adds a bit of freshness and edge without begi overwhelming.)

5. Place in a bowl and add butter and cheese and mix thoroughly with a fork.

6. Slice bread in half as though for a sandwich and generously spread butter on both halves, place on a cookie sheet, and cook in the center of the oven until the top is golden brown.

You can add dried herbs to the mixture such as Italian Seasoning, and I occasionally do, but it's gilding this lily in most cases.

*Note 1: Do use real Parmesano Reggiano, it makes a big difference.

**Note 2: I like using English muffins instead of Italian bread.
