For half a millenia, Spain was where Europe and Northern Africa met culturally, artistically, and culinarily. And although living through those years was probably terrible, the results were wonderful producing extraordinary art, architecture, and food. This spice mixture is intended for for pork, but I've found it's also great on chicken and lamb. (Larger image.)

  • 3 Tbsp. ground cumin
  • 2 Tbsp. ground coriander
  • 1 Tbsp. sweet paprika
  • 1 1/2 tsp. cayenne pepper
  • 1 tsp. ground turmeric
  • 1 tsp. dried oregano
  • 1 tsp. salt or more to taste
  • 1/2 tsp. freshly ground black pepper


Mix all ingredients together. This mixture will keep in a sealed jar for six months.
