Lamb

Lamb is one of the most sensual of dishes. When properly cooked using the right recipe it's silkily tender, packed with flavor, and full of surprises. You want to take the bones in your hands and gnaw on them relishing each hard-won last fragment of flesh. And yet, for such a flavorful bite lamb can be Mediterranean, Arabic, or Asian in character. Wonderful stuff.
Kofta: Middle-eastern Street Food
Koftas are a middle-eastern street food made of ground lamb formed into sausage shape and then grilled. Serves 2.
Lamb Steak with Gremolata
This recipe for lamb steak with gremolata is quick, easy and works equally well with lamb chops. Serves 2.
Shepherd's Pie - Gaelic Goodness
This recipe works beautifully with either beef or lamb. It also works with leftover roast beef or roast lamb (which is the way my mother made it). If using leftovers, you can skip browning the meat. Serves 4.

Braised Lamb Shanks with Carrots and Onions
Slowly braised lamb shanks are almost impossible to beat on a cold wintry day. Savory and richly-flavored, this dish will almost make you glad the weather is bad. Serves 2.
Rack of Lamb with Horseradish
Perhaps the most perfectly elegant meal for two, rack of lamb usually has six ribs (three each) guarding that most tender of any cut of meat, the tenderloin. Serves 2.
