Koftas are a middle-eastern street food made of ground lamb formed into sausage shape and then grilled. I remember eating them in both Egypt and Lebanon and liking them very much so when a friend sent me a copy of Diana Abu-Jaber's memoir, The Language of Baklava that included a recipe for kofta I had to make some. What I particularly like is the mixture of spices in this version. (Larger image.) Serves 2.

Ingredients:
- 1 lb. ground lamb
- 1 egg; lightly beaten
- 1 sm. onion; finely chopped
- 2 Tbsp. chopped parsley
- 1 tsp. ground cumin
- 1 tsp. chili powder
- 2 tsp. tumeric
- 1/2 tsp. ground cinnamon
- 1/2 tsp. ground allspice
- Salt and pepper to taste
Preparation:
1. Build a hot fire in your grill.
2. Combine all ingredients in a medium bowl and mix by hand.
3. Shape 1/4 cup of mixture around a skewer to form a flattened sausage shape three to four inches long.
4. Grill for about five minutes per side.
5. Serve topped with yogurt mixed with lemon juice and crushed garlic.
