I have a particular fondness for dishes that are quick, easy and yet elegant. This simple lamb steak with gremolata works equally well with a lamb chop (adjust the cooking time) and the gremolata (a combination of lemon zest, garlic and parsley) elevates it to a feast for the eyes as well as the belly. (Larger image.) Serves 2.

Prep Time: 20 minutes

Cook Time: 10 minutes

Ingredients:

  • 2 lamb steaks
  • 1 Tbsp. olive oil
  • 1 Tbsp. fresh lemon juice
  • 1 clove garlic; crushed
  • Salt and pepper
  • Gremolata*

Preparation:

1. Rub steaks on both sides with crushed garlic then season with salt and pepper.

2. Combine olive oil and lemon juice. Place steaks on a large plate and pour oil and lemon juice over them.

3. Allow steaks to marinate for 10 minutes, then flip and marinate 10 minutes longer. (15 - 30 minutes per side is even better, but not required.)

4. Meanwhile, make the gremolata (*recipe here.)

5. Heat a grill pan or skillet over medium-high heat or preheat broiler.

6. Cook steaks 2 - 3 minutes per side in grill pan or skillet or broil for 3 - 4 minutes per side.

7. Top with gremolata and serve.
