Let me confess up front that when it comes to grilling meat - or anything else - I'm an arch-conservative. You should only grill over natural charcoal. You should never touch lighter fluid (a chimney works perfectly). I won't go near a gas grill and the only time I use briquettes is when I'm smoking meat - barbequing - (because natural charcoal burns too hot) and then I only use natural briquettes.
The Fire Department Hates Me
I also love grilled food so you can imagine my consternation when the local fire department decreed that no open flames (charcoal or gas) were allowed within 20 feet of a condo or apartment - and, in fact, neither grills nor fuel could even be stored within 20 feet. My home is a third-floor condo apartment so my evenings of happy grilling and long slow days of slowly smoking were over. Hopefully you're not in my unenviable position and are free to pursue the great art of cooking over fire.
