Rack of Lamb

Rack of Lamb

Kevin D Weeks
Valentine's Day is almost upon us and there is no other holiday so suitable for a couple unencumbered with children. Whether you're a young couple who haven't yet become parents, an older pair whose kids have moved out, or middle-aged partners who have chosen to forgo parenting, this is the day to celebrate your relationship and this is the menu to do it with.

Cece Fritos (Fried Chickpeas): A delightful beginning you can make up to a day or two in advance, enjoy them with a glass of champagne or wine while dinner is cooking.

Rack of Lamb with Horseradish: Rack of lamb is a truly elegant entrée and a rack happens to be perfect for two. Coincidence? I think not.

Potatoes Parmesan: These delightful little potatoes can be prepared in the time it takes to cook the lamb; and complement it perfectly. If your mate isn't a cook, have him (or her) make these.

Glazed Carrots with Mint and Lemon: A wonderful spin on the classic dish, the bright orange colors round out the visual appeal of the plate. (Note: The carrots can be steamed a day or two in advance and then quickly sautéed for dinner.)

Blood Orange Pots de Crème: Deliciously pink and wonderfully creamy these beauties are the piece de resistance to Valentine's Day.

Put some music on the stereo, relax and have dinner later than usual so you aren't rushed, and cook for your love. There's no better way to show how much you care.
