Pork Recipes

Pork is the premiere meat. Deeply flavorful, highly adaptable, and deservedly popular in most parts of the world. From Southern pulled pork to Chinese sweet and sour pork, it can fit any palate and almost any cuisine. And the meat itself seems infinitely variable from the shoulder to the ham.
Chops And Kraut: Franco/Germanic Delectation
Chops and Kraut is my variation on a traditional dish from the Alsace region of France (which for a long time was the Alsace region of Germany) called choucroute. This recipe serves two, but because this dish is much better the second day I recommend at least doubling the recipe.
Making the Most of Pork

This is the first in a series of articles/recipes that demonstrate a featured recipe and then offers a schedule and additional recipes to use the leftovers. The featured recipe does require some time and, sometimes, effort but the leftover recipes are all quick and easy enough for a weeknight meal. This week we'll make the most of a pork loin roast.

Hawaiian Pork Chops - Sweet and Salty
Hawaiian Pork is one of my favorite quick meals taking only about 15 minutes to make. with a wonderful sweet and salty taste. Serves 2.

Cuban Sandwich: Miami's Claim to Fame
Cuban sandwiches are marvelous things consisting of roast pork, ham, salami), dill pickles, Swiss cheese, and yellow ball-park mustard; built on a bread similar to Italian; and then grilled. Serves 2.
Citrus-Marinated Braised Pork
This Caribbean-inspired recipe for braised pork in a citrus marinade is delicious on it's own. But the leftovers are perfect for the famous Cuban sandwich from southern Florida. Serves 2 with leftovers.
Florentine Pork Chops: A New Twist on an Italian Classic
This recipe for Florentine Pork Chops is based on the Florentine Biftecca alla Fiorentina. There's no spinach involved, but it's still mighty good. Serves 2.
Mediterranean Pork Roast with Garlic and Rosemary

Deceptively simple, this Italian recipe for milk-braised pork chops surprises with it's rich complex flavors. It takes a while to cook but couldn't be easier to make. Serves 2.
Pork Burgers: Something Different for the Grill
This recipe for pork burgers is, without doubt, one of the best recipes I've ever come up with. They're amazingly good combining ground pork with bacon, onion, and parmesan cheese. Makes 3 burgers.
Grilled Moorish Pork Kabobs (Pinchos Morunos)
This recipe for Grilled Moorish Pork Kabobs is extraordinarily good, a bit spicy but not too much so, they need to marinate over night but cook quickly on a hot grill the next day. Serves 2.
Pork Cutlets: A Southern Favorite
An old southern favorite, this recipes for pork cutlets leaves out the traditional white gravy and it's load of calories, opting instead for a fresh and bright squirt of lemon juice. Serves 2.

Pork medallions are one of my favorite meats, I love the rich dense flavor and firm texture. And properly cooked its is as tender as good steak. Pork also has an affinity for sweet flavors and fruit in particular. Serves 2.

This sausage ragu is a perfect winter meal. Hearty and guaranteed to warm your bones on a blustery night. Serves 2.
