It's hard to beat a glazed, baked ham - it's also difficult for two people to eat a whole ham, however fond they are of leftovers. This recipe offers most of the satisfaction of a glazed ham without having to spend a month eating it. The flavor profile is a tasty balance of salty, sweet, hot, sour and savory and so it touches almost every taste bud in your mouth. Best of all, it's easy enough to make on a weeknight and yet fancy enough for a special occasion. (Larger image.) Serves 2.

Ingredients:

  • 2 (6-oz.) slices fully cooked ham
  • 1 orange (optional); peeled and segmented, seeds removed
  • *** Glaze ***
  • 4 tsp. orange marmalade
  • 1 1/2 tsp. Dijon mustard
  • 1/8 tsp. ground mace
  • 2 tsp. unsalted butter; melted

Preparation:

1. Turn on broiler and place a rack in second position from top.

2. Melt butter with marmalade in a small pan over low heat. Whisk in remaining glaze ingredients together in a small bowl.

3. Line a baking sheet with foil and place ham steak on it. Brush with glaze.

4. Broil for 6 - 8 minutes until brown, bubbling and hot.

Fast and good, Member sandfan

I made the recipe exactly as written, and it was delicious. I used European [OK, French] marmalade, as I find American marmalade entirely too sweet. Served it with Yukon Gold mashed potatos, sweet peas, and creamed onions. Terrific meal! After broiling the ham, there were some bits of glaze that had run off and become carmelized [almost burned] on the bottom of the pan. Do not throw this away! This is a cook's treat. Reminds me of creme brulee.
