Carrot Salad

A friend of mine gave me this is an unusual recipe for carrot salad. I think it's particularly good with grilled meats. But it's nice change of pace at any time and the last time I took it to a pot luck it disappeared before I even got a helping. You might want to use a sweet onion such as Walla Walla or Vidalia or even a red onion. (Larger image.) Serves 2.

Prep Time: 10 minutes

Total Time: 10 minutes

Yield: Serves 2.

Ingredients:

  • 2 Tbsp. mirin
  • 2 Tbsp. rice vinegar
  • 1 Tbsp. soy sauce
  • 1 tsp. dried mustard
  • 1/2 tsp. dark sesame oil
  • 2 sm. carrots; peeled and shredded
  • 2 Tbsp. finely chopped onion
  • 1 Tbsp. grated fresh ginger root

Preparation:

1. Whisk together mirin, vinegar, soy sauce, mustard, and sesame oil.

2. Toss dressing with carrot, onion, and ginger and allow to marinate for about 30 minutes before serving.

Yum!, Member rach.thomp

I followed the recipe except that I put a tsp of whole grain mustard instead of dried mustard. It was great! Very yummy on top of rice. I will definitely make this again as a side dish in a Japanese meal. Might also make it as a salad for BBQs next summer.
