A friend of mine gave me this is an unusual recipe for carrot salad. I think it's particularly good with grilled meats. But it's nice change of pace at any time and the last time I took it to a pot luck it disappeared before I even got a helping. You might want to use a sweet onion such as Walla Walla or Vidalia or even a red onion. (Larger image.) Serves 2.

Prep Time: 10 minutes

Total Time: 10 minutes

Yield: Serves 2.

Ingredients:

  • 2 Tbsp. mirin
  • 2 Tbsp. rice vinegar
  • 1 Tbsp. soy sauce
  • 1 tsp. dried mustard
  • 1/2 tsp. dark sesame oil
  • 2 sm. carrots; peeled and shredded
  • 2 Tbsp. finely chopped onion
  • 1 Tbsp. grated fresh ginger root

Preparation:

1. Whisk together mirin, vinegar, soy sauce, mustard,and sesame oil.

2. Toss dressing with carrot, onion, and ginger and allow to marinate for about 30 minutes before serving.
