Popovers are a great quickbread suitable for breakfast with some jam, conserves, or marmalade but also make a great quick and fancy roll for a dinner menu. I've made a lot of popovers over the years using a lot of different recipes, but this one, adapted from a recipe by Rose Levi Beranbaum in The Bread Bible. Most popover have a strong eggy flavor but these taste more buttery than eggy. (Larger image.) Makes 6.

Prep Time: 10 minutes

Cook Time: 35 minutes

Total Time: 45 minutes

Ingredients:

  • 1 cup Wondra flour (must be Wondra)
  • 1/2 tsp. salt
  • 1/2 tsp. sugar
  • 1 cup whole milk; at room temperature
  • 2 eggs; at room temperature
  • 4 Tbsp. butter; melted

Preparation:

1. Heat oven to 425 degrees 30 minutes in advance. Place one oven rack on the bottom level and the other on the second level (this avoids having the popovers rise into the other rack).

2. Whisk together flour, salt, and sugar in a large bowl.

3. Slowly mix in milk using an electric mixer on low.

4. Add eggs one at a time, thoroughly mixing after each addition.

5. Add two tablespoons of butter to batter.

6. Brush popover cups with butter then distribute remaining butter evenly among the cups.

7. Heat popover pan in oven for 3 minutes.

8. Fill each cup halfway with batter.

9. Cook popovers on the second rack for 15 minutes then reduce heat to 350 degrees and continue cooking 20 - 35 minutes until well puffed and brown. (Note: Do not open oven for at least the first 20 minutes.)

10. 6 to 10 minutes before popovers are done, use a small, sharp knife to poke a slit in the top of each popover and allow steam to escape.

11. When done, remove popovers from the pan and cool on a rack.

Although you can make these in an ordinary muffin tin, if you end up making them very often you'll want to get a special popover pan (compare prices). Also, The Bread Bible is one of my three favorite bread books (compare prices).
