You will not believe how good this recipe for asparagus parmesan is - or how easy. In fact it barely deserves the title "recipe." Nevertheless, it's a great way to use leftover steamed or simmered asparagus. In fact, when I buy asparagus I cook it all and have some fresh that evening, and use the remainder the next night to make asparagus parmesan. Note, be sure to use the best Parmigiano you can find (the real thing from Parma is best) and shred it just before using. (Larger image.) Serves 2.

Prep Time: 10 minutes

Cook Time: 10 minutes

Ingredients:

  • 1/2 lb. asparagus
  • 4 Tbsp. mayonnaise*
  • 2 oz. shredded Parmigiano Reggiano or best parmesan cheese you can buy

Preparation:

1. Turn on broiler.

2. Steam or simmer asparagus until tender - or use leftover asparagus.

3. Place asparagus in a shallow baking dish and spread liberally with mayonnaise.

4. Sprinkle shredded parmesan over mayonnaise.

5. Broil until cheese is brown.

Tip: Homemade mayonnaise is best.
