Roasting cauliflower totally changes its character, providing a wonderfully nutty undercurrent of flavor. You may wonder at my use of granulated garlic as opposed to fresh garlic, but I've found that the fresh garlic ends up in the pan while the powdered garlic clings to the cauliflower, ultimately providing more garlic flavor. (Larger image.) Serves 2.

Prep Time: 5 minutes

Cook Time: 20 minutes

Total Time: 25 minutes

Ingredients:

  • 1/2 head cauliflower; cut into bite-size florets
  • 2 Tbsp. olive oil
  • 1 lemon; juiced
  • 1 1/2 tsp. granulated garlic (or garlic powder)
  • 1 1/2 tsp. salt

Preparation:

1. Heat oven to 400 degrees.

2. Place cauliflower in a bowl.

3. Drizzle with lemon juice and olive oil.

4. Sprinkle with garlic and salt.

5. Cover bowl with a plate and shake to distribute ingredients.

6. Spread on a baking sheet and cook in the center of the oven until cauliflower is lightly browned - about 20 minutes.

The only way I've ever been able to stand cauliflower is smothered in cheese sauce. This recipe totally changed my mind. It was great! The first time, my garlic powder must have been old, because it lacked the really strong garlic flavor I was looking for. Got some fresh, upped the olive oil a little, and the result was everything I was hoping for. Terrific recipe.
