At some point every summer I end up grilling squash. If you're already planning steaks or chops on the grill it's so easy to brush some summer squash with olive oil, season it with herbs, and toss it on the grill while the steaks finish cooking. My preferred grill is a Weber Smokey Joe (compare prices). It's the perfect size for a pair of rib eyes and a couple of small zucchini. (Larger image.) Serves 2.
Ingredients:
- 2 sm. (6 - 7-inch) zucchini; stem removed and cut in half lengthwise
- 2 tsp. olive oil
- 2 tsp. dried Herbes de Province, Italian herbs, or Fine Herbes (learn more)
- Salt and pepper to taste
Preparation:
1. Brush squash with olive oil.
2. Sprinkle cut-side of squash with herbs, salt and pepper.
3. Cook skin-side down on grill, away from direct heat, for 2 - 3 minutes. Flip and cook another 2 - 3 minutes.
